This grape, among the most cultivated in the world, interacts to the fullest with the soil and microclimate: it perfectly translates into the glass the place where it grew, provided it is cared for by a viticulture that is attentive to preserving the physiology of the vine and respectful of environmental balances. For us, who put making "local wines" at the top of our priorities, dealing with Chardonnay is important. Its descriptors confirm that the road is right: marked minerality, snappy nerve, supple elegance represent the constant which marks our Chardonnay, despite the diversity of vintages. A wine that does not fear a long journey over the years.

THE GRAPES 100% Chardonnay
THE VINEYARD
On our ronco di Gramogliano with East exposure, Guyot training and average age of the vines of 25 years
THE SOIL
Eocene marls and sandstones, locally called “ponca” (flysch) with clay veins
THE HARVEST
Manual, with collection in boxes - yield of 60 q/h
THE VINIFICATION Crushing and destemming of the grapes. Soft pressing. Cooling of the must at 12°C. Static settling for 36 hours. Fermentation at controlled temperature of 18/20°C in steel. A percentage is vinified in wood, with subsequent batonnage. After 9/12 months it goes into the bottle where it remains for another 9/12 months before being marketed
THE TASTE
Bright straw yellow colour. The sense of smell returns a clean and distinctly mineral nose that takes you back to the soils that generated this wine. The aromas harmonize in an elegant and composed bouquet in which the white peach and a light crust of bread are distinctive. On the palate it is fresh, dry and its long silky texture accompanies ripe fruit and very light and delicate notes of vanilla
